Blackberry Chocolate Gelato

Decadent, creamy, and rich with berries and chocolate. This is dairy-free gelato that takes ten minutes to make. Perhaps you should go make it right now and get indulging!

Makes: 6 servings

Time: 10 minutes


2 cups frozen blackberries (or other berry)

1/4 cup coconut nectar

1 1/4 cups full fat coconut milk

2 teaspoons vanilla extract

1/4 cup cashews, soaked for one hour

1 ounce bar of dark chocolate, cut into small pieces and shavings


In a high speed blender, combine blackberries, coconut nectar, coconut milk, vanilla, and cashews. Blend on high until smooth, about 20 seconds. Stir in chocolate and transfer to a freezer-friendly container. Let chill for at least 3-4 hours. Enjoy!
