Chocolate Chia Pudding

There is no need to give up your indulgences when you can nosh on desserts like this Chocolate Chia Pudding.  Not only does it taste divine, it is nourishing with ingredients like raw chia seeds (fiber and fatty acids) and raw cacao.  Just a tid bit about cacao…it contains 61 antioxidants, with nearly 20 times the antioxidant potency of red wine and 30 times that of green tea.  It also contains high levels of Magnesium, which aids in digestive elimination.  Raw cacao can be enjoyed in smoothies, beverages, desserts, or added to chilies, stews, and sauces such as Mole for added decadence.  You could eat this pudding every day and be getting healthier with every bite.

Makes:  7 ½ cup servings

Time:  30 minutes (includes chill time)

Ingredients:

3 cups vanilla almond milk

¼ cup raw cacao powder

½ cup raw chia seeds

¼ cup agave nectar (or maple syrup, or stevia)

1 tsp. vanilla extract

Preparation:

Place almond milk, cacao, chia seeds, agave, and vanilla in a high-speed blender until smooth and creamy.  Transfer to a glass container and refrigerate for at least 30 minutes or until set.
