Elderberry Syrup to the Rescue

Makes:  1 cup

Time: 12 hours

Ingredients:

1/2 cup dried elderberries (I buy mine at People’s Co-op)

2 1/2 cup filtered water

1 Tb. fresh lemon juice

1/2 cup raw honey

Preparation:

1.  In a small saucepan, combine elderberries and water, and bring to a slow simmer.  Do not let the water boil.

2.  Cover and let simmer for 30 minutes.

3.  Remove from heat, add lemon juice and honey, and stir to combine.

4.  Let rest at room temperature for 8-12 hours.

5.  Transfer to a glass jar with a tight fitting lid and store in refrigerator for up to 1 month.

6.  At the first sign of illness, begin taking 1-2 teaspoons of syrup per day.
