Tasty Profile: Because of their shared nutty flavor, coconut and spirulina play nicely together in this dreamy summer smoothie. When combined with peppery ginger, spicy cayenne, and candy-like dates, the combination of flavors is unmatched. Ginger is an excellent inflammation tamer, coconut water cools and hydrates, and the use of shredded coconut and coconut milk deliver a healthy dose of high-quality saturated fat to keep you sated for hours.
Makes: Approx. one 16-ounce smoothie
1 large handful spinach leaves
2 kale leaves, de-ribbed and chopped
1 tablespoon shredded coconut
1/4 cup coconut milk
1 1/2 cups coconut water
3 pitted medjool dates
2 teaspoons agave, coconut nectar, or yacon syrup
1 teaspoon spirulina crystals
1 teaspoon fresh grated ginger
1/8 teaspoon cayenne pepper
In a blender, combine all the ingredients. Blend on high for 20 seconds or until smooth. Enjoy immediately and sip slowly!
