Mint Apple Lime Cooler

For those of you who missed my Mediterranean Herb Kale Salad Wraps share you are likely unaware of the herb bender I am on these days. I can’t get enough of fresh mint, cilantro, parsley, basil, and thyme. I am adding them to EVERYTHING. Why? Well for starters, they smell incredible, and they add freshness and dimension to a meal or beverage without sugar, fat, and calories. They also pack serious nutritional punch in their tiny leaves, offering detoxification, anti-inflammatory effects, and soothing to the gut. So, into today’s pressed juice they go!

This little refresher is a breezy blend of mint, lime, cilantro, jalapeño, apple, celery, and cucumber. Feel free to experiment with what you have on hand, and adjust the heat to your liking, or leave it out all together.

Makes:  approx. 16 oz

Time:  10 minutes (includes veggie washing and clean up)

Ingredients:

2 sweet and sour apples (such as Fuji)

5 celery stalks

1/2 medium cucumber

6 sprigs of fresh mint

1 handful fresh cilantro

1 lime, peeled

1/4-1/2 jalapeño, seeded

Preparation:

Pass all ingredients through a juicer and sip away.
