Mint chocolate chip ice cream was a childhood treat I enjoyed only on rare occasions. (I thank my mother for than now, though at the time, I felt very deprived.) We would either make a stop at Baskin Robbins or if I was real lucky, an entire afternoon was devoted to this tasty treat when my mom would drive me and my brothers to the Tillamook Ice Creamery and we could get a single scoop straight from the factory. I never deviated from the flavor combination and still to this day, love mint and chocolate. There is no need for me to wait for a special occasion anymore to be able to enjoy these nostalgic flavors but instead now indulge daily with nutritious and all raw ingredients. How scrumptious is that?!

Ingredients:
10 oz. almond milk, vanilla (chilled)
3 Tb. chocolate protein powder (raw-vegan)
15 fresh mint leaves
1 Tb. raw cacao powder
1 Tb. chia seeds
ice
1 Tb. cacao nibs
Preparation:
1. In a high speed blender, combine almond milk, protein powder, mint leaves, cacao powder, chia seeds, and ice. Blend on high for 30 seconds. Pour into a glass and sprinkle with cacao nibs. Enjoy immediately.
