Makes: 3 cups
Ingredients:
2 cups frozen peas, thawed
2 Tb. fresh lemon juice
2 Tbsp. tahini
2 small peeled garlic cloves, chopped
1/4 tsp. ground coriander
1/4 tsp. ground cumin
1/2 tsp. sea salt
1/4 cup unfiltered olive oil
2 Tbsp. fresh cilantro, chopped
1 Tbsp. fresh mint, chopped
1 Tbsp. fresh parsley, chopped
1/2 tsp. spirulina powder
Preparation
1. In a Vitamix or other high-speed blender, combine peas, lemon juice, tahini, garlic, coriander, cumin, and salt.
2. With motor on low, add olive oil, cilantro, mint, parsley, and spirulina, and purée only 1 minute. Do not over blend.
3. Transfer to a sealed container and store in refrigerator for up to 7 days.
