Pineapple Mint Chia Slushy

Sip on this island inspired mocktail, and let an abundance of fiber and digestive enzymes do their cleansing work. Calming mint, sweet and hydrating coconut water, and tangy lime juice pair beautifully with enzyme-rich and succulent pineapple to deliver a summer beverage you will want to enjoy on any hot day.

The Details:

Makes:  Approx. (1) 16-ounce juice

Time:  5 minutes

Ingredients:

1 cup cold young coconut water

1/2 cup frozen pineapple chunks

1/4 cup mint leaves, packed

1 lime, juiced––about 2 tablespoons

Pinch pink sea salt

8 large ice cubes

1 teaspoon chia seeds

Preparation:

1.  In a Vitamix or other high-speed blender, combine coconut water, pineapple, mint, lime juice, salt, and ice. Blend until slushy, about thirty seconds. You may need to stop and shake the container a few times to ensure all ingredients are incorporated.

2. Add chia seeds, and blend for five seconds. Transfer into a tall glass and enjoy with a spoon or large straw!
