Sugar and Spice Crusted Artichokes

Makes:  3 cups

Time: 30 minutes

Ingredients:

2 large artichokes

1/2 tsp. coriander seed

1/2 tsp. red or green peppercorns

1 Tb. fresh peeled ginger, chopped

2 small peeled garlic cloves, chopped

1/2 tsp. sea salt

1 tsp. dried oregano

1 tsp. dried thyme

2 Tb. maple syrup

1 Tb. coconut oil, melted

Preparation:

1. Trim spiny ends of all leaves from artichokes.  Cut through the middle lengthwise and remove hairs surrounding the heart.

2. Fill a large pot with water and bring to a boil.  Add artichoke halves and cook for 30 minutes.  Remove and transfer to a bowl.

3. Heat a grill to medium-high heat.

4. Using a mortar and pestle, mash together coriander seed, peppercorns, ginger, garlic, sea salt, oregano, and thyme.  Transfer to a small bowl.

5. Add maple syrup and oil to bowl, and stir to combine.

6. Using your hands, coat all sides of artichokes with peppercorn paste.

7. Place cut side down on heated grill and cook for 12 minutes.  Turn and cook for another 12 minutes.  Serve hot.
