What in the World is Irish Moss?

A magical, nutritious, and raw vegan god send, Irish Moss is a type of seaweed that, when blended with water, makes a paste that thickens soups, vegan cheeses, spreads, dressings, smoothies, and desserts.  It is essential for creating decadent yet low fat creamy treats.  Don’t get all freaked out…it is completely tasteless, odorless, and colorless when prepared properly.

The two most common forms are dried flakes and whole moss like you see in the picture.

Look for it at your local health food store or buy online via a raw food retailer.

Now, in order to use it with ease, you’ll want to make a paste and store it for use within 10 days.  Here is what you do to make about 4 cups of moss paste:

1.  Thoroughly rinse 2 cups dried whole moss or flakes until your water runs completely clean.  This step is essential for removing any sand granules or other sea remnants.

2.  Fill a large bowl with cold water, and soak the moss for 24-36 hours in the refrigerator.  The moss will expand to 3 times its size so consider that when selecting your bowl.

3.  Pour off the soaking liquid and transfer soaked moss to a Vitamix or other high-speed blender.  Add 4 cups cold water.  Start the blender on low, and slowly increase your speed to high and blend until smooth and thick.

4.  Transfer to a glass container and store in refrigerator for use in your next raw dessert, soup, or smoothie.
