You Can’t Pinch Me, I’m Green!

We are fast approaching St. Patty’s Day and I have a menu planned for enjoying and sharing an entire day of delectable GREEN dishes.  Will you join me?  I think you should….a little leprechaun told me, eaten more greens is good luck for your body!  Here’s what’s in store:

Breakfast:

Green ‘Patty’ Cakes

Oh my goodness, these ridiculously nutritious pancakes are a family favorite.  Kids love the green colored cakes covered with vibrant purple blueberry syrup.  You will love the healthful ingredients of teff, coconut flour, almond butter, and spirulina which all provide fiber, protein, and healthy fats.  And guess what else?  They will be on your table in just fifteen minutes.  Dig in!

Tangy Greens Juice

I just adore this fresh pressed juice for starting the day.  It is tangy and sweet and made with tart apple, mint, cucumber, cilantro, lemon, and spinach.  Think green lemonade to honor St. Patty’s day!

Lunch:

Brussels Sprout Salad with Castellano Olives, Shaved Fennel, and Sunchokes

This salad is made with shaved raw Brussels sprouts which are surprisingly more approachable for some people than their cooked version.  Paired with refreshing fennel, and crunchy sunchokes, and then tossed in a creamy lemon-garlic-olive juice dressing, you get nutrition, savor, and crunch in every bite.

Snack:

No Bean Sweet Pea Hummus

You will adore this no bean hummus.  It is guilt-free so if you polish off the bowl, you won’t feel like you need to run five miles to burn it off.  Serve with jicama or carrot sticks for dipping, or spread on flax seed crackers, in a wrap, or a top a warm slice of gluten-free toast.  If you want to be as daring as I was…lightly freeze it and serve cool for a unique and refreshing creamy dessert.

Dinner:

Zucchini Pasta with Pesto and Spring Vegetables

Just because it says pasta doesn’t mean it is heavy and loaded with simple carbs.  These noodles are made from fresh and raw zucchini, creating a light and crunchy, yet still comforting supper.  I warmed them slightly and then tossed with a vegan pesto and spring vegetables for a balanced and nutritious meal.

Dessert:

Spirulina Coconut Truffles

Dessert indulgence is welcomed in my programs and so my clients never feel deprived.  This is essential as deprivation causes over eating and often indulging in the wrong kinds of treats.  When you wish to enjoy dessert, moderate your portions, and enjoy treats that contain whole grains, nuts, seeds, or superfoods like spirulina, maqui super fruit powder, or lucuma low-glycemic sweetener.
