Perfect Roast Vegetables Every Time

Watch this great video put out by Vegetarian Time on how to roast vegetables.  One note we want to add, is to avoid the use of olive oil and instead use melted coconut oil for tossing your veggies.  Coconut oil is the ONLY oil stable enough to not break down and produce trans fats when heated.

They suggest the use of aromatics such as thyme and rosemary, but you can use all kinds of herbs and spices such as turmeric, cayenne, cumin, coriander, basil, garlic, onions, lemon peel, chilis, or gourmet salts.  Bon appetit!
