Kickin’ Coconut Green Smoothie

The sun is out, the days are longer, and that means it’s juice and smoothie season!

Embrace the warmer months while sipping and slurping your way into bikinis and board shorts! Remember, the most nutritious and body-beautifying recipes are those that incorporate all macronutrients––fats, carbohydrates and proteins.

Try boosting your bevvies with healthy fats such as coconut, avocado, nut butters, seeds, and nuts. Add vibrancy and dimension by incorporating herbs like parsley, mint, basil, tarragon, and cilantro. Enhance your liquid creations with an array of spices such as ginger, turmeric, garlic, glove, nutmeg, and vanilla. And, of course experiment with blending every imaginable fruit and vegetable. Tasty Profile: Because of their shared nutty flavor, coconut and spirulina play nicely together in this dreamy summer smoothie. When combined with peppery ginger, spicy cayenne, and candy-like dates, the combination of flavors is unmatched. Ginger is an excellent inflammation tamer, coconut water cools and hydrates, and the use of shredded coconut and coconut milk deliver a healthy dose of high-quality saturated fat to keep you sated for hours.

Makes: Approx. one 16-ounce smoothie

Ingredients:

1 large handful spinach leaves

2 kale leaves, de-ribbed and chopped

1 tablespoon shredded coconut

1/4 cup coconut milk

1 1/2 cups coconut water

3 pitted medjool dates

2 teaspoons agave, coconut nectar, or yacon syrup

1 teaspoon spirulina crystals

1 teaspoon fresh grated ginger

1/8 teaspoon cayenne pepper

Preparation:

In a blender, combine all the ingredients. Blend on high for 20 seconds or until smooth. Enjoy immediately and sip slowly!
