Cilantro-Honey-Lime Vinaigrette

This versatile dressing is so yummy, and has elements of tang, sugar, salt, and spice. Use it for tossing with a salad of fresh romaine and orange segments, a tropical fruit salad of mango, pineapple, and avocado, or drizzled over steamed cauliflower and grilled vegetables. You can also use it to add zing to enchiladas, tacos, and Mexican pizza, or to top white bean chili!

Ingredients:

2 small garlic cloves, minced

1 teaspoons sea salt

1/4 cup raw honey

6 tablespoons white wine vinegar

1/2 cup fresh lime juice

1 cup (packed) fresh cilantro, chopped

2 jalapeños, seeded and chopped

1/4 cup water

1/4 cup extra virgin olive oil

Preparation:

1.  In a Vitamix, or other high-speed blender, combine garlic, sea salt, honey, vinegar, lime juice, cilantro, jalapeño, and water. Blend until combined, about 15 seconds.

2.  With motor running on medium, slowly add olive oil until thoroughly blended. Store in a glass, air-tight container for use within seven days.
