This past Friday, I had the pleasure of sharing superfood wisdom at Xtend Barre in Portland. The owner was hosting a client appreciation night, and gifted guests the most charming evening! Appreciative ladies attended the open house to snack on delicious catered fare, participate in raffles, and mingle. They sipped sangria as they shopped for and sampled body, hair, and beauty care goodies from a variety of retailers in the neighborhood. Not a bad way to kick off the weekend!
I was invited to showcase superfoods, and sample a couple treats to demonstrate how eating clean can be delicious and not a chore. My table was adorned with Aloha Superfood Chocolate and Navitas Naturals cacao, chia, maca, goji berries, and more. The smoothie I chose to share was fitting for the 85 degree night––a piña colada-like green smoothie made with fresh pineapple and vanilla protein powder. I, of course also sampled my Loaded Protein Balls as they are always a hit.
It seemed that everyone who tasted the smoothie mmm’ed and awww’ed, and at least one-third of guests touted it as being the best smoothie they ever had! With a response like that, I couldn’t help but share the recipe with you!
Piña Colada Verde
Makes 2 servings
2 handfuls kale, chopped
1 handful baby spinach
1 cup frozen or fresh pineapple chunks
1 cup coconut water
1 large handful ice
2 scoops vanilla protein powder (I like Aloha)
Pinch sea salt
Juice of 1/2 lime
In a high speed blender, combine all ingredients. Blend on high for thirty seconds, divide between two glasses and sip your way to the tropics!
