Summertime is blueberry season, and a delicious and simple way to incorporate these nutrient-dense morsels into your diet is to blend them into a sweet and creamy smoothie confection. What’s extra sweet, is you and the kiddos will adore this one despite a sneaky serving of dark leafy greens making their way into the mix!

Makes: Approx. (2) 16-ounce smoothies
Time: 5 minutes
Ingredients:
1 cup fresh blueberries
1/3 medium banana
3 pitted medjool dates
11/2 tablespoons chocolate plant protein powder
1/4 medium avocado
2 handfuls spinach leaves
1/2 cup vanilla almond milk
1 cup coconut water
6-8 ice cubes
Preparation:
1. In a Vitamix or other high-speed blender, combine blueberries, banana, dates, raw cacao or protein powder, avocado, spinach, almond milk, coconut water, and ice. Blend on high for 20 seconds and enjoy!
Note: If using protein powder, omit the dates, as the shake should be sweetened enough by the powder.
